Ingredients:

  • 2-3 large eggs
  • 1/2 cup Cowboy Candy
  • 1 tablespoon milk or cream (optional, for creamier eggs)
  • ½ tablespoon butter or oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped cilantro, a dash of Mango Habanero Hot Sauce

Instructions:

  1. Prepare the Jalapeño: Finely dice 1/2 cup of the Cowboy Candy
  2. Whisk Eggs: In a small bowl, whisk together the eggs and milk or cream (if using) until just combined. Season with salt and pepper.
  3. Sauté the Jalapeño: Heat the butter or oil in a non-stick skillet over medium heat. Add the diced jalapeño and sauté for about 1 minute, or until slightly softened and fragrant.
  4. Cook the Eggs: Pour the egg mixture into the skillet with the sautéed jalapeño. Let the eggs cook undisturbed for about 30 seconds, or until a thin layer starts to set around the edges.
