Ingredients:

  • 1 medium or large sweet potato
  • 1/2 Cup Cowboy Caviar
  • Additional (Optional) toppings:
    • Shredded cheese (cheddar, Monterey Jack, or cotija)
    • Chopped cilantro
    • Avocado 
    • Squeezed Lime Juice

Instructions:

  1. Cook the Sweet Potato: Choose your preferred method for cooking the sweet potato:
    • Oven: Preheat oven to 400°F (200°C). Wash the sweet potato and pierce it several times with a fork. Bake directly on the oven rack or on a baking sheet for 40-60 minutes, or until it's soft when squeezed.
    • Microwave: Wash the sweet potato and pierce it several times with a fork. Microwave on high for 5-10 minutes, flipping halfway through, until soft. Cooking time will vary depending on the size of your sweet potato and your microwave's power.
    • Instant Pot: Wash the sweet potato and pierce it several times with a fork. Add 1 cup of water to the Instant Pot. Place the sweet potato on the trivet. Cook on high pressure for 15-20 minutes, followed by a natural pressure release for 5-10 minutes.
  2. Prepare the Sweet Potato: Once the sweet potato is cooked and slightly cooled (if needed), slice it lengthwise down the middle, being careful not to cut all the way through. Gently fluff the inside with a fork.
  3. Stuff with Cowboy Caviar: Spoon the Cowboy Caviar generously into the center of the opened sweet potato.
  4. Add Optional Toppings: Top with any of your desired additions, such as shredded cheese, sour cream, cilantro, black beans, corn, or avocado.
