Chipotle Shrimp Tacos
Ingredients: - 1 lb large shrimp, peeled and deveined - Salt and pepper to taste - 2 tablespoons olive oil - 1/4 cup Chipotle Pepper Hot Sauce - 8 small flour or corn tortillas - 1 cup shredded lettuce - 1 cup diced tomatoes - 1/2 cup diced red onion - 1/4 cup chopped fresh cilantro - Lime wedges for serving
Instructions: 1. Season the shrimp with salt and pepper. 2. Heat olive oil in a skillet over medium-high heat. 3. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they are pink and cooked through. 4. Pour the Chipotle Pepper Hot Sauce over the shrimp and toss to coat evenly. Remove from heat. 5. Warm the tortillas in a separate skillet or microwave. 6. Divide the shrimp among the tortillas. 7. Top each taco with shredded lettuce, diced tomatoes, diced red onion, and chopped cilantro. 8. Serve with lime wedges on the side for squeezing over the tacos.
